Instant Pot Pulled Pork

One of our favorite meals to make in the Instant Pot. If you're looking for an excuse on purchasing the Instant Pot, let this be it! To be fair I have many recipes we love in the Instant Pot, and it has been such a huge help in our kitchen. It has quickly become a favorite kitchen appliance to have, making meals super easy, quick and delicious.
This pulled pork is so simple to make with just a handful of ingredients, most you just rub all over the meat and then place to cook. When cooking in the Instant Pot, you just pop it in, turn it on, set your time and go about your business! It couldn't be easier to prepare this delcicious pulled pork.
Now many other recipes may call for low slow roasting, smoking the meat, or a variety of ways which I am sure is also quite amazing! However, those methods can be quite time consuming and tiresome. Making it this way is simple, but you are sure to end up with a spectacularly delicious meal.
The final product is soft, juicy, tender, with all the right balance of flavors. Not too overpowering or spicy, but just perfectly balanced creating a delicious pulled pork that can be used in several different ways.
I use this also as pulled pork sandwiches where it with slathered in our favorite barbeque sauce, but I will be using it particularly for my guava barbecue pulled pork to pair along with my rice and beans and yuca fries.
The flavors are the perfect balance and match, and it is truly one of our favorite meals to have. When my guava barbecue sauce is drizzled or poured (which is my way) all over it, it is something to do the happy dance over. It is so incredibly delicious and flavorful bursting with flavor!

1. In your Instant Pot insert, place your pork loin in.
Typically, I will cut my loin in half and remove as much fat as possible.
2. Measure and pour your spices and dried herbs over the meat.
3. Season with salt pepper and add brown sugar.

4. Rub dried rub all over the meat.
​
5. Add in water.
​
6. Place lid on Instant Pot and place to sealing.
​
7. Press the pressure cook button on the Instant Pot and set time. Depending on how many pounds of meat you use, will depend on the time.
The Instant Pot usually calls for 15 minutes per pound of pork roast.

8. Manually or let pressure self-release.
If you are manually releasing pressure, carefully set valve to venting. If you are self-releasing, just leave until the valve button goes down.

9. Carefully remove and drain liquid reserving 1/2 to 1 cup of liquid.
​
10. Using a hand mixer, carefully shred the pork.
​
11. Add in the 1/2 cup of liquid. Use more if needed, to your desired consistency.

ENCHILADAS
Pork is not the only option for meat for this recipe! I typically use chicken and shred it up like I did the pork and you can even use more to full these up such a cooked rice! Mix it all together and stuff each tortilla.
1. After shredding your meat, add in half a can of enchilada sauce alone with the onions, cilantro, and can of black beans.

2. Mix everything well.

3. At the bottom of a casserole dish, pour one 10 oz of red enchilada sauce.
​
4. Fill each tortilla with meat mixture and roll tightly.
​
5. Place seam side down in enchilada sauce.
​
6. After assembling all the enchiladas pour one 10 oz can of enchilada sauce on top of the filled tortillas.

7. Top with shredded cheese of choice.
​
8. Bake at 350 degrees F for 20 minutes until cheese is nice and bubbly.
